Tadataka Maruyama, the former head sharpener of HADO, is a craftsman whose work quietly speaks for itself. After years of rigorous training under a master sharpener in Sakai, he developed a deep sensitivity to edge geometry, balance, and real cutting performance. Today, through his own workshop, Enjiki Knives, Maruyama-san continues to refine his philosophy, creating blades that arrive exceptionally sharp, hold their edge beautifully, and glide through ingredients with smooth, confident precision. His close collaboration with Touroku Sakai, led by its third-generation owner, brings this level of craftsmanship to a wider audience, uniting some of Japan’s finest makers under a shared vision of authenticity and excellence. Together, they are developing unique knife lines that reflect not only skill and experience, but also a genuine passion for preserving the spirit of true Japanese knife making.
